The turquoise of the Apulian Sea, which characterizes this collection, plays here with the motif of an ice crystal. In an arid and scarcely rainy land like Puglia, ice was a valuable resource. The small amount of snow that fell in winter was collected and stored inside special tanks as an important source of sustenance. The Apulian citizens know how to make the most of what the nature offers, like, for example, extracting the extra virgin olive oil from the olive trees.
Light fruitiness, enhanced by vegetal hints of freshly cut green grass, oregano and fresh almonds. On the palate, bitterness and spiciness of slight intensity in balance.
A light and fruity oil, the ideal condiment to enhance a dish without distorting or covering up the flavours. We recommend it for boiled potatoes, mozzarella, rice soups, pinzimonio, white meats, sauces, fennel velouté, risotto, jam tart, steamed and marinated fish.
