A harmonious, medium-fruity oil obtained from a cultivar of French origin; in fact, the term peranzana may derive from Provençal, the area where this olive variety was cultivated at the time, obtaining a precious oil. It was the favorite oil of the ecclectic Prince of Sansevero, Raimondo di Sangro, among the first exponents of the European Enlightenment, to whom we owe the introduction of this prized cultivar in Apulia in the 18th century. Shades from iridescent blue to lavender, with golden brushstrokes: the Peranzana label was inspired by the colors and the scents of the Provence region in France and by the clear sky of Puglia.
Medium fruity, enhanced by vegetal notes of artichoke, tomato, oregano. Well-balanced bitter and spicy taste of medium intensity.
Used in all preparations, it intensifies the flavors without covering them. Serve on: Cooked vegetables, White meat, Raw on radicchio, lettuce, romanella and valerian salads, Caprese salad, Grilled fish, Raw meat carpaccio
