A harmonious, medium-fruity oil obtained from a cultivar of French origin; in fact, the term peranzana may derive from Provençal, the area where this olive variety was cultivated at the time, obtaining a precious oil. It was the favorite oil of the ecclectic Prince of Sansevero, Raimondo di Sangro, among the first exponents of the European Enlightenment, to whom we owe the introduction of this prized cultivar in Apulia in the 18th century. Shades from iridescent blue to lavender, with golden brushstrokes: the Peranzana label was inspired by the colors and the scents of the Provence region in France and by the clear sky of Puglia.
Medium fruitiness, enhanced by vegetal hints of artichoke, tomato, oregano. On the palate, bitterness and spiciness of medium intensity in balance.
Used in cooking in all preparations, it intensifies flavours without covering them. Ideal with: cooked vegetables, white meat, raw on salads of radicchio, lettuce, romanella, valerian, Caprese salad, grilled fish, raw meat carpaccio.
